Rosé/Saignée 2006
This is a rosé style wine made by the traditional saignée method of bleeding off juice from just crushed red grapes. Merlot juice was macerated on skins for only four hours before adding the free run juice of cabernet sauvignon after it had 16 hours of skin contact. This is a deeper coloured rosé with a slight hint of residual sweetness to balance the full fruit flavour. This is a versatile wine to match with many types of cuisine.
